For the past 6 years, I have been researching and writing about the health benefits of honey. Publications include 4 books (The Honey Revolution series) and other articles which detail the benefits of honey and focus on the differences between honey and other sugars, specifically in the way that honey is metabolized in the body differently than sucrose or glucose or HFCS and why. I have given over 35 presentations on the subject across the U.S, and Canada.

One of our books (Feed Your Brain First) contains over 60 pages of honey recipes, and describes in practical detail the ways honey can be used in cooking and menu planning to promote the formation of glycogen in the liver where it is accessible for brain fuel.
